We opened Camaradas Mexican-Italian Kitchen in January 2019 to introduce Las Vegas to food that my family and I have been enjoying for years. Our food truck serves an innovative take on traditional Mexican and Italian cuisine, something I’ve watched our Chef (who’s also my Dad) create my entire life.
My Dad is an inspiration. Not just for the delicious dishes he prepares, but also for being an example of hard work and passion. My Dad was raised by his Grandmother with his 5 siblings in Honduras and eventually immigrated to the US to pursue better opportunities. He first settled in Los Angeles where he tirelessly worked multiple jobs, 7 days a week, to provide for our family. After starting at the bottom as a dishwasher at a restaurant, he committed himself to honing his skills in the kitchen as a cook. This dedication paid off as our family moved to Las Vegas where my Dad became a chef at a renowned Italian restaurant on the Strip. There he earned the respect of his peers in the Italian fine-dining space, while gaining mentors in 2 future James Beard winners. Ultimately, his mentors helped sponsor my Dad to attain his US citizenship. You can say that food has a major significance with my family.
I’ve been watching my Dad transform simple ingredients into delectable creations my entire life. Growing up, one of the fondest memories was staying up late on Saturday nights with my Mom and waiting for my Dad to come home from work. He would walk in with smelling like roasted garlic and herbs, carrying a white to-go bag. I would jump off the couch and rush over to the kitchen table where I was met with my favorite meal—fettuccine! Today, we want to share this excitement with Las Vegas.
My Dad and I launched Camaradas to welcome you into our family. We grew up eating Mexican and Italian food, so when we cook, we honor our journey. Our fine-dining finesse can be seen in our recipes and customer service, but our meals are made to be conveniently enjoyed by everyone.
